The text leaves your network
Encrypted in transit and processed inside the EU, but it does leave, and no setting changes that. If your obligation is that it must not, the answer is the local client — same detection core, different place.
What “Zero-Knowledge” covers here
Custom patterns you store: they are encrypted in your browser and the server keeps only ciphertext. Encryption keys are derived on your device with Argon2id. It does not describe the sign-in — the password is still sent at sign-in today — nor document processing, and the reversible-encryption operator does send its key to the server. Written out in full.
